Winemaking: The grapes are sorted meticulously at the winery, and fermented in stainless steel tanks by indigenous yeast. Malolactic occurs in tank, and the wine is transferred to second and third vintage French oak barrels for ageing.
Comments: Paso a Paso is the winery’s first Tempranillo produced from the estate grown vineyards planted in the goblet system. A non-interventionalist style of viticulture and enology takes advantage of the high quality vineyards and the grapes they produce.
