Derrumbes Guerrero is produced by maestro vinatero Israel Ríos Bucio in Coyuca de Catalán, Guerrero using wild maguey Penca Ancha. The agaves are cooked in an underground pit oven, milled using a mechanical shredder, fermented in open-air plastic barrels, and double distilled in a still that is made of a hollowed out higuera blanca tree trunk that sits over a copper pot.
